Between meetings, kids soccer practice, and the stinging tears of a chopped onion, it’s hard to appreciate the small conveniences. Matthew knows this, but he doesn't take it for granted.

For many, a freshly cooked salmon fillet on a bed of charred corn and sweet cherry tomatoes is a reward after a long day's work. For Matthew, it’s the focal point of his never-ending schedule. Matthew’s game is plant based salmon. Salmon that not only looks, feels, and tastes like the real thing, but has the nutrients and health benefits for which salmon is so famous. In a world of health culture and dietary restrictions, Matthew’s salmon is making its mark in some of Toronto’s finest establishments.

Take GIA for example. A three-time Michelin recommended, plant-forward, Italian restaurant, grocer, and juice bar… now that’s a mouthful. The juxtaposition of the warm lighting, cozy couches, and chaotic open kitchen exemplifies what it means to wear Easy Mondays, and made it the perfect location for a photoshoot.

Matthew has been wearing Easy Mondays for a long time, and he knows, more than most, how crazy life can get. He also knows how easy it is to pick out the perfect white T-shirt in the morning, or how conveniently the double zip cardigan can elevate your outfit.
